Crispy potato medley

This is another incredibly easy and nutritious one that anyone can make. The trick is simply in how to make the potatoes. This dish is a great main dish or use it as a side.


2-3 potatoes

bunch of asparagus

garbanzo beans (chickpeas)

sweet soy sauce

olive oil

half lemon

sea salt

cracked pepper


How to make it:

  1. First, clean everything thoroughly, including the garbanzos. If you simply bought jarred beans, this is very important to get rid of the additives and preservatives. You can also prepare your own, which is by far the best option. Simply let 1 cup of beans soak overnight in water.

  2. Put the potatoes in a large bowl and drown them in ice. Let them sit for 30 minutes. This is a very important step as it's what makes the potatoes crispy when you bake them. As the potatoes are sitting, cut the asparagus into about 1 inch pieces. Make sure that you cut off the ends that are white and don't use those.

  3. Put the garbanzos and asparagus into a large baking pan. Drizzle them with olive oil and sweet soy sauce and mix them up.

  4. Once the potatoes have been sitting for a while, cut them into pieces and add them to the mix. Add the herbs, salt and pepper then mix everything up. Squeeze a half lemon over everything.

  5. Bake in the oven for about 30 minutes, or until the potatoes are nice and soft.
