Raspberry Oatmeal Bars

These bars are super quick and easy to make and perfect for breakfast or a snack. They're relatively healthy and full of energy. This recipe uses raspberries but you can also use blueberries or blackberries.


1 cup of rolled oats

1 cup of flour

1 cup of (plant-based) milk (I used soy)

About half a cup of raspberries (fresh or frozen)

1/4 cup of either honey or maple syrup

1 teaspoon baking soda


1 teaspoon apple cider vinegar

1 teaspoon of cinnamon

How to make them:

  1. Mix everything together in a large bowl with a spoon, slightly mashing the raspberries but not fully.

  2. Cover the bottom of the pan with liquid coconut oil and spread the mix evenly.

  3. Bake for 10-15 min on 375 degrees F or 180 degrees C.

  4. Let cool. Then add cut raspberries on top. Enjoy!

**I don't really like too much added sugar, but if you're the kind of person who doesn't mind, then add about 1/2 cup of sugar to make them sweet and more dessert like.
