Vegan Peanut Butter & Banana Cookies
If you're the kind of person who loves to eat raw cookie dough or if you have children that you want to bake with, then definitely try this egg-free cookie recipe. It's super fast and easy and perfect for kids to do.
1 banana (optional)
1 cup of flour
1 cup of peanut butter
1 cup of sugar (you can add in less sugar if that's your preference, as it is mine. or about 1/2 cup sugar 1/2 cup brown sugar)
1 tablespoon vanilla extract
1/3 cup of alt. milk (I used soy but almond is also great. Make sure it's unsweetened and unflavored)
1 teaspoon baking powder
pinch of salt
1 teaspoon cinnamon (optional)
1 teaspoon nutmeg (optional)
Making the cookies:
Mash the banana separately if you're choosing to use one. This part is super fun for kids.
Mix together the peanut butter, sugar and vanilla. It's best to whip or beat the ingredients to make it a little more fluffy, but if you don't, they will still turn out okay.
Add in the other ingredients and beat until creamy. The banana can be added last, as it's super thick and you want to make sure that everything else blends together first.
Roll into balls and place on the cookie sheet, making sure that you put down coconut oil first to prevent any sticking. Or you can make a large cookie bar as I normally do.
Bake for 8-12 minutes. If you used the banana it'll probably be closer to 12.
Take them out and let them set and cool outside of the oven to prevent crumbling.
I prefer soft cookies, but if you want want them to be a little more crispy then leave the banana out and bake them longer. Enjoy!
